Spontaneously fermented beer, the Oude Pinot Noir Tilquin à l'ancienne is made by the fermentation of 350 grams of Pinot Noir grapes per liter of lambic. Unfiltered and unpasteurized, this beer is refermented in the bottle. Pinot Noir grapes come from the Valentin Zusslin Estate, grown biodynamically and hand-harvested in their Bollenberg vineyard.
