During the September hop harvest in Yakima (USA), brewers from Portland repeatedly emphasized one principle. We have just implemented it - and our version of the West Coast classic, we did not hesitate. We put an unbelievable amount of aromatic Mosaic™ hops into the kettle - almost entirely during the last 15 minutes of boiling. What's more. We used the other half for intensive dry hopping.
