Phase Three Eunoia Batch 21 Stout - 50 CL

For Eunoia 21, the brewers constructed a blend of imperial stouts averaging 21 months of age in a mix of 12 and 20-year-old Elijah Craig bourbon barrels. After an extended rest, the beer was conditioned on our favorite Ghanaian cocoa nibs, with a touch of Madagascar vanilla and a hint of sea salt. The result is a liquid truffle: simple in concept, yet layered and expressive. Notes of dark chocolate, espresso, and dried stone fruit lead the way, while the subtle salinity elevates the cocoa and keeps the richness in check. We are proud of how these carefully chosen ingredients come together in such a focused, balanced beer.
