Phase Three Eunoia Batch 16 Stout - 75 CL

For Eunoia 16 the brewers decided to forgo adjuncts. We had the idea roughly 8 months leading up to blending to take roughly 75% of the total barrels the brewers had reserved for the potential blend and put that portion into Laird's Apple Brandy barrels. We let the barrels sit for about another seven months before the brewers tasted. We decided to bring the amount of apple brandy barrels back to about 55% of the total final blend and introduce additional whiskey barrels for a better balance. 55% of the blend was aged in apple brandy barrels to impart subtle apple, spice, and a unique wood profile. The whiskey balances out the whole. Lots of oak, spirit, apple, and our unmistakable "stout recipe 2" that the brewers adore so much. The total age duration for Eunoia 16 averages 19 months.
