PLEASE NOTE: The ABV of this beer varies; in the United States, 6.9% is used. The Orval brewery produces only one beer for sale, a top-fermented beer that continues to ferment in the bottle. It is 6.2% alcohol. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. Its aroma and fine taste are due more to the hop cones and yeast used than to the malt. What is special about Orval beer is that hops are added at two different stages of the production process. In the brewhouse, a large quantity of very fine hops is first added – this provides the well-known bitter taste and is why the beer has a longer shelf life. Later, in the storage cellars, hops are added again. This is the so-called British ‘dry hopping,’ which produces the wonderful aroma that completely enthralls even the most carefully forewarned taster. In the tasting room, Orval beer and cheese make a very good pair: the unique shape of the bottle and glass, the design of the label, the coasters, and other publicity material – it is all a legacy from the early 1930s.
