We used a purified capsaicin elixir to bring the spiciness to perfection. Capsaicin is the active compound in chili peppers that gives them their characteristic heat. Scientifically known as 8-methyl-N-vanillyl-6-nonenamide, it is primarily responsible for the pungency of hot peppers. Capsaicin has several medicinal properties, including its use in topical creams for pain relief, as it works by depleting substance P, a neurotransmitter that sends pain signals to the brain. Then there's the SUPER SPECIAL cacao from Jamaica: Dark profile; heavy chocolate base with light notes of biscuit and dark fruit, followed by spicy, earthy, green and oaky notes. This is all so serious. We've taken the edge off with marshmallows and Mexican vanilla. Dark muscovado sugar adds depth to the cocoa and contributes to the spiciness.
