Metaphore Here and now: Cherry 2022 - 75 CL

This beer represents the constant and productive tension between untamed nature and human refinement, showcasing a careful expression of local terroir and the spirit of the seasons, while exhibiting the proud qualities of the finest fruit. It consists of a blend of beers cooled under the stars, spontaneously fermented and aged one, two, and three years in oak barrels, combined with local organic sour cherries. It is entirely made from local organic ingredients, a humble tribute to local agriculture, shaped by a graceful hand of time. This vintage is finally a blend of three seasons of brewing and two seasons of fruit harvest from an organic cherry orchard in South Bohemia. I am very proud of this, as I finally have enough mature and aged beers to create richer blends packed with fruit. It has many deep cherry flavors, much spice, nutmeg, cinnamon, vanilla, and a mulled wine-like character. Meanwhile, it has a lot of energy and brightness, making it an easy drinker.
