Cooled and spontaneously fermented beer in oak barrels for 16 months and further aged on organic local apricots for 12 months. Again, a different and unique barrel with a distinct and self-contained character. In this, I try to capture the unique essence of one day in a beer and a footprint of the local terroir and layered with hand-picked apricots from a local orchard. Multiple old apricot varieties give a very complex expression of the fruit and prolonged aging ensures a deep, rich taste. The backbone of a beer is again built on local organic barley malt and raw organic spelt sourced from the local Hare Krishna community, where they have lived and functioned in a low-intervention and organic way for the past 3 decades.
