metaphore Defiance Lambic/Geuze - 75 CL

A mixed fermentation beer with Nitra grapes, aged for 18 months in oak barrels. Nitra is a local Cabernet-type grape variety, originally grown in Slovakia. It is now cultivated very sparingly. The year 2020 was undoubtedly a tough year for many and full of unexpected events. Just as an old grower faced the challenge of selling his harvest, as demand that year was virtually non-existent, I was offered to make use of it. With this late harvest, in early November!, the very ripe berries were then allowed to macerate in a barrel-aged beer. This one could not be more different from, for example, “Pinots”. Nitra grapes have a fairly thick skin and provide a lot of color and tannins! It was then carefully blended and is funkier and true to this unique variety.
