In order to revive an old tradition, Brouwerij Koningshoeven started maturing La Trappe Quadrupel in oak barrels in 2009. This created a unique Trappist beer with a balanced taste and a unique oak aroma. The complex taste depends on the type of barrel in which the beer has matured and therefore differs per batch. The beer undergoes a second fermentation in the bottle, can be kept for years and is pure indulgence for the true beer lover. Batch #37: 100% wood This truly remarkable Oak Aged batch consists of a mix of oak, acacia and cherry barriques with medium and heavy toasting, in which the Quadrupel was allowed to mature quietly for up to 2.5 years. Previous La Trappe Quadrupel Oak Aged batches mainly used barrels that had been used to mature spirits and wines. This time around, the brewers decided to use only unused barriques to create a unique signature of different types of European wood. Batch 37 has a nice and firm layer of beige foam. Thanks to the long wood maturation the beer has a beautiful dark color, which goes much further than your normal Quadrupel ale. The remarkable combination of woods used for this batch produces a truly complex, rich and fine aroma and flavour. Long maturation in different types of unused barriques gives La Trappe Quadrupel that typical woody aroma, with a scent that hints at lots of vanilla, almond, cocoa and caramel.
