The barrel-aged Chimay-bleu from March 2016 distinguishes itself from the classic Chimay-bleu thanks to the many nuances offered by the additional fermentation in wooden barrels. Visually, the beer has a deep brown hue with a bright sheen. The extremely fine and smooth head also has a hint of cream. On the nose, notes of black tea, jasmine and wood are equally dominant. On the palate the woodiness becomes the bread crust, toasting, mocha and cognac aromas and the empyreumatic notes. This 2016 edition of Barrel-Agde Chimay Bleue boasts an excellent blend of Chimay Bleue and Cognac characters. This balance of roundness and power is best appreciated between six months and a year after bottling. For this 4th batch, 3 types of barrels were used. 31% of French oak 40% of the American oaks 29% of new cognac. Produced in limited quantities using craft brewing methods. The sophisticated bouquet is perfectly shown when served at a temperature between 10 and 12 ° C.
