Guess who's back? A Loerik Cantillon, 20 years later! A loerik is a mixture of lambic that will give birth to a gueuze whose fermentation - for an unknown reason - will take much longer than a regular gueuze. While a gueuze needs several months in the cellar before it becomes sparkling, a Loerik will need to rest for years due to this slow fermentation. Because yeasts do not work as strongly as they should, this atypical gueuze is considered lazy, hence the name Loerik (which means lazy in the Brussels dialect). We cannot explain this slower development and are therefore unable to produce such a beer. A Loerik is always the chance of coincidence with a beautiful end result. Slow fermentation gives beer much complexity and delicacy.
