Cantillon Iris 2020 Lambic/Geuze - 75 CL

Iris is a spontaneously fermented beer made annually by Cantillon outside the domain of traditional lambic. Instead of using a traditional 35% wheat base, Iris is brewed entirely with pale malt. It is hopped with a 50/50 mix of both aged and fresh Hallertau hops and then aged in barrels for approximately two years. After the maturation period, Iris is "cold hopped" one more time with fresh Saaz hops before being bottled to give it a fresh hop bitterness and aroma
