Cantillon Iris 2020 Lambic/Geuze - 75 CL

Iris is a spontaneously fermented beer made annually by Cantillon outside the realm of traditional lambic. Instead of using a traditional 35% wheat base, Iris is brewed entirely with pale malt. It is hopped with a 50/50 mix of both aged and fresh Hallertau hops and is then aged in barrels for about two years. After the aging period, Iris is "dry-hopped" again with fresh Saaz hops before bottling to give it a fresh hop bitterness and aroma.
