In March 2005, the Cantillon brewery bought second-hand barrels in the Cognac region. For 15 years, the wood was impregnated with cognac. Then, our lambic was extracted for 2 years to extract all the flavors and aromas to create a unique gueuze. The name comes from the geographical location of the brewery.
