What if you combine an Imperial Stout with Balcones barrels? This results in a beautifully balanced and yet very complex barrel-aged beer. The complexity is due to the combination of the wood aromas and a idiosyncratic light acidity from the malts used, tannins and a slightly fruity touch. Because the flavors are not too heavy, it is very accessible and can therefore be a good entry into the world of barrel-aged beers.
