Here too, the basic old and young lambic is matured in oak barrels. But here the brewers add approximately 400 grams of real cherries per liter to one-year-old lambic. This causes a second fermentation in the barrels. Oude Kriek Boon then undergoes further fermentation in the bottle and has an alcohol volume of 6.5%. After a few months the taste has matured to the desired taste. Oude Kriek Boon is a test of your patience. It should remain in the bottle for about 2 years. At first it tastes like fruit, especially sour cherries. Oude Kriek Boon eventually evolves into a deep taste reminiscent of Port or Madeira wine. This is kriek at its best.
