Here, too, the base of old and young lambic is aged in oak barrels. But here, the brewers add about 400 grams of real cherries per liter to one-year-old lambic. This creates a second fermentation in the barrels. Oude Kriek Boon then undergoes a further fermentation in the bottle and has an alcohol volume of 6.5%. After a few months, the taste ripens to the desired flavor. Oude Kriek Boon is a test of your patience. It must remain in the bottle for about 2 years. Initially, it tastes like fruit, especially sour cherries. Oude Kriek Boon eventually evolves into a deep flavor reminiscent of Port or Madeira wine. This is kriek at its best.
