1 and 2-year-old lambic with apricots (including Bergeron) from the Ardeche in France. This blend has a more acidic profile than Moonwalk. -- Just as the brewers search every year for specific barrels with a soft lambic and dairy note for the Moonwalk, during this tasting the brewers also come across other beautiful barrels. In this blend, the brewers combine the soft lambic with a fresher lambic. This lambic 'dances' with the apricots in the fermentation tank. The apricots are also Bergerons from France. These apricots are characterized by their juicy and fleshy character with a deep flavor.
