ITA- Xyauyù Kioke is a beer that combines two great craft traditions linked to the world of fermentation: the art of producing craft beer meets the art of producing craft soy sauce. Kioke is a barrel without a lid, made of cypress wood, produced in Japan, on the island of Shodo by Yasuo Yamamoto (Yamaroku Shoyu) in which the soybeans are fermented. Xyauyù was born in Piozzo, Italy, in the agricultural brewery Baladin, from the desire of Teo Musso to explore the world of oxidations. The beer, which has been fermented and matured for over 18 months, is refined “in the open air” in a new Kioke vat in which the soy has not been fermented and which gives it resinous notes of cypress and a slightly acidic nuance, creating a unique and original aromatic profile. SCARY- Xyauyù Kioke combines two great artisanal traditions in the world of fermentation: the art of brewing beer meets the art of producing artisanal soy sauce. The Kioke is an open cypress wood barrel produced by Yasuo Yamamoto (Yamaroku Shoyu) in Japan on the island of Shodo and is used for the fermentation of soy sauce. Xyauyù was created in Piozzo, Italy, at the Baladin Farm Brewery, from Teo Musso's desire to explore the world of oxidation. After fermenting and maturing for 18 months, the beer matures in the open air in a new Kioke barrel, i.e. one that has never been used for fermenting soy. The barrel provides resinous cypress notes and a slightly sour touch, which creates a unique aromatic profile.
