Humle: Columbus. Gær: US-Ale Just think about it, so many European countries have a similar tradition for spicy winter cookies: Pepperkaker, Pernik, Gingerbread, Pfefferkuchen, Speculaas... But whatever their name, the origins of these little brown cakes with a hard crust can all be traced back to - You guessed it - Amager. In ancient times, northern Amager was nowhere near the urbanized, sprawling Copenhagen district it is today. There was... nothing. Or almost nothing, because of course there was The Wizard, who apparently lived forever. When the upper class of Copenhagen needed a spell, The Wizard could get things done. But because they were wealthy and upper class, many of the customers were also extremely stingy. So most paid him in kind rather than money, and the wizard’s cabin ended up being filled with things like flour, molasses, eggs, cinnamon, pepper, and ginger. One day around Christmas, the wizard had had enough. He had hoped to spend the holidays on a cruise ship in the Caribbean, but he was stuck in his cabin with all that useless junk. So in a fit of rage, he called out the strongest curse he could ever utter on those donated ingredients. It is said that the sonic boom was heard from Crete to Lofoten, and for seven days it rained non-stop
