bottling date 07/07/2023For this very first whisky gueuze, the brewers blended LAMBIK that had been in two small Belgian Owl barrels for almost 16 MONTHS. THESE BARRELS CONTAINED YEARS OF SINGLE MALT WHISKY AND ORIGINALLY CAME FROM Heaven Hill Distilleries. WE BLENDED WITH SOME MORE LAMBIC OF ONE AND FOUR YEARS OLD, which brings the weighted average age of this blend to over 37 months. Approximately 80% OF THE LAMBIC IS brewed with locally produced grains. This first SMALL batch MARKS OUR FIRST STEPS IN THE WHISKY BARREL AGING OF OUR LAMBIC. AND WE STILL HAVE SO MUCH TO DISCOVER IN THE WORLD OF BARREL-AGED DRINKS...
