3 Fonteinen Twist of Fate XI.viii: Plum: Early Tolse 2020 Lambic/Geuze - 75 CL

Blend n° 2 • 14/12/2020 • number of bottles: 614 This version of our Plum is made with the variety Vroege Tolse. We harvested these plums on a beautiful morning in July 2020, in the beautiful orchard of a retired teacher, named Willy. His field is located on the Wijngaardberg, on the border between Gelrode and Rotselaar. We macerated the whole plums (with pit) for almost five months in an oak barrel. We used two-year-old lambic for the maceration and young lambic for the blending. The final fruit intensity is 519 grams of plums per liter. 75% of the lambic is brewed with grains from the Pajot. 100% brewed lambic from 3 Fonteinen. Brewery 3 Fonteinen “Speling van het Lot” (Twist of Fate) is a series of experimental brews, barrel maturations, fruit macerations and small batch blends.
