The final fruit intensity is 384 grams of peaches per liter of yellow peach lambic.3 Fonteinen Perzik (Peach) is obtained by macerating hand-picked and hand-pitted peaches in young traditional lambic for at least four months, in a ratio of one kilo of peaches per liter. After this, the fruit lambic is further blended with young lambic, bottled, and the fermentation continues in the bottle. This Perzik is a refined fruit lambic with exuberant aromas of stone fruit. The peaches come from Ludo Rosseels, one of the last, if not the last, Belgian peach growers. Natural fruit, without added juices, syrups, or sugars.
