bottling date: 21/12/2018 For this specific yellow peach lambic the variety Red Heaven was used and macerated for 5 months on 3 Fonteinen lambic in an oak barrel. The final fruit intensity is 384 grams of peaches per liter of yellow peach lambic. 3 Fonteinen Perzik is obtained by macerating hand-picked and manually pitted peaches on young traditional lambic, for at least four months, at a ratio of one kilo of peaches per liter. The fruit lambic is then further assembled with young lambic and everything is bottled and the fermentation continues in the bottle. This Perzik is a refined fruit lambic with exuberant aromas of stone fruits. The peaches come from Ludo Rosseels, one of the last, if not the last Belgian peach grower. Natural fruit, without the addition of juices, syrups, or sugars. Unfiltered and unpasteurized. 3 Fountains Peach is the result of the maceration of the pêches entières, cueillies and dénoyautées à la main, the young lambic tradition, depending on the weight of the pêches par litre. Ensuite, the lambic fruit is assembled with young lambic and all the rest is embouteillé or the fermentation continues en bouteille. Peach is a bière lambic refined, with the aromas of fresh fruits.
