bottling date: 17/01/2018 This special Framboos (Raspberry) has macerated for five months. The final fruit intensity is 37% (so 370 grams of fruit per litre of finished Framboos). The summer raspberries are hand-picked and organically grown by Ferme Framboos. 3 Fonteinen Framboos is the result of macerating hand-picked whole raspberries in young lambic for at least four months, at a ratio of one kilogram of fruit per litre of lambic. The raspberry lambic is then blended again with young lambic to obtain a minimum intensity of 35% fruit and is immediately bottled. These bottles are then aged for at least five months in our cellars, allowing the raspberry lambic to develop into a beautiful, artisanal and refined Framboos. With an abundant forest fruit nose as it warms in the glass, 3 Fonteinen Framboos will age perfectly, but may lose some of its vibrant colour and forest fruit aromas. This unfiltered and unpasteurised lambic is completely natural and contains no artificial juices, syrups or sugars. Traditional Lambic is living, cultural heritage rooted in the Zenne Valley! In the rolling hills around the Dijle and Laan valleys, in the beautiful Sint-Agatha-Rode (Huldenberg), southeast of Brussels and near Leuven, lies Ferme Framboos. Owner Jan Butaye focuses on a variety of hand-picked berries, especially raspberries, blackberries, redcurrants and strawberries.
