bottling date: 17/01/2018 This special Framboos macerated for five months. The final fruit intensity is 37% (i.e. 370 grams of fruit per liter of finished Framboos). The summer raspberries are hand-picked and organically grown by Ferme Framboos. 3 Fonteinen Framboos is the result of macerating hand-picked whole raspberries in young lambic for at least four months, in a ratio of one kilogram of fruit per liter of lambic. The raspberry lambic is then re-blended with young lambic to obtain a minimum intensity of 35% fruit and is immediately bottled. These bottles are then stored in our cellars for at least five months, allowing the raspberry lambic to develop into a beautiful, artisanal and refined Framboos. With an abundant forest fruit nose as it warms in the glass, 3 Fonteinen Framboos will age perfectly, but may lose some of the vibrant colors and forest fruit aromas. This unfiltered and unpasteurized lambic is completely natural and contains no artificial juices, syrups or sugars. Traditional Lambic is living cultural heritage rooted in the Zenne Valley! In the rolling hills around the valley of the Dijle and the Laan, in the beautiful Sint-Agatha-Rode (Huldenberg), southeast of Brussels and near Leuven, lies Ferme Framboos. Owner Jan Butaye focuses on a variety of hand-picked berries, particularly raspberries, blackberries, red currants and strawberries.
