Whiskey barrels served as the basis for batch 39, in which the La Trappe Quadrupel matured for more than 2 years. These barrels come from distilleries in the Irish 'Jameson' and the Scottish 'Speyside' region. Before the barrels were used for maturing whisky, they were first used for the production of sherry. Aromas of both liqueurs are recognizable in this batch. The batch has a slightly fruity aroma, with immediately recognizable notes of pear and dark forest fruit. In the background, soft aromas of oak and vanilla are noticeable. The taste starts sharp and the whiskey is subtly present. As the sip progresses, the taste becomes softer. Licorice and natural licorice root emerge in the aftertaste. The whiskeys used in this beer, unlike most Scotch whiskies, have a very mild taste. This results in a balanced and accessible beer.
