Blend no. 81 • bottling date: 07/06/19 • Number of bottles: 722 Brouwerij 3 Fonteinen “Game of Fate” (Twist of Fate) is a series of experimental brews, barrel maturations, fruit macerations and/or blends in small batches. This 14th version is a bottled lambic of 18 months old that is further carbonated in the bottle (a monoblend) that was brewed on December 20, 2017. During such a “Longest Night” the brewers add various ingredients and inject them on the four different refrigerated ships in our brewhouse in Beersel. One of those additions were fresh pine branches and needles, from the garden of the country house at Ukkelse Steenweg 327. This villa was previously owned by an employee of the nearby Van Haelen lambic brewery, which closed in 1957. Chef Maarten Van Essche's pop-up restaurant was recently established there, called “Wilder At The Villa”. Maarten, currently owner of restaurant Magma in Mechelen, came up with the idea, inspired by previous experiences in Scandinavian cuisine... The Wilder logo was designed by Viktor Hachmang.
